Getting started

  Germination

  The seed is recalcitrant — off the tree it lives days, not months, so it is sown fresh from the berry and never from a packet. Even fresh and warm (it wants 20 °C+) it comes up erratically, anywhere from three weeks to three months.

  The slow start

  Famously unhurried: a seedling spends its first year making a taproot and a stick. Indian field culture doesn't take a first leaf harvest until nearly a year after transplanting. Patience — the speed comes later.

  Flush + harvest

  Heat is the accelerator: flush after flush of aromatic pinnate leaves through the warm months. This is the harvest window — pick whole sprigs and it only bushes out harder.

  The warmer it gets, the faster the sprigs come.

  Winter rest

  In the wild this tree goes briefly leafless in the HOT dry season; a cool room moves that rest to winter. Leaves yellow (the chlorosis is cold-driven, not hunger) and may all drop. It looks dead. It almost never is — scratch the bark and find green, then wait for March.

  Bare sticks in January are a rest, not a funeral.

  White clusters

  On a mature plant in real warmth: terminal clusters of small white star flowers with a sweet scent. Outdoors they are a carnival — one Bengal field study counted 45 insect species visiting. A young windowsill plant sits this act out entirely; the flowers come years in.

  Black berries

  True berries ripening green through red to shiny purple-black, with genuinely sweet edible pulp around a seed tradition says to discard. Sow one FRESH within days and it grows; dry it a fortnight and it is gone — the seed does not wait.

  A berry is a one-week offer of a whole new tree.

  Suckers on the march

  Underground the roots are colonising: suckers pop up at the pot's edge all warm season. One tree wants to be a thicket — pot a sucker up and it's the easiest new plant this species offers.

  Cold wet feet

  The winter killer: a leafless tree drinks almost nothing, but the watering habit keeps pouring. Cold soggy soil rots the roots while the top looks merely asleep. Water scarcely at all until spring.

Care milestones

  Pinch as it wakes

  Tip-pinch the waking branches and the tree answers with side shoots — this is how a lanky stick becomes a bush. It takes hard pruning without complaint.

  Feed through the flush

  A balanced, acid-leaning feed monthly while it is actually growing. It runs to iron chlorosis in alkaline soil — but December yellowing is the cold talking, and feeding a dormant tree just salts the pot.

  Pick whole sprigs

  Harvest by the sprig — snap the whole pinnate leaf off at the rachis base rather than plucking leaflets. Regular picking is pruning by another name, and the tree bushes out to meet it.

  Pot up a sucker

  Ease a root sucker out with some root of its own and pot it — far surer than cuttings, infinitely surer than stored seed. This is where curry leaf plants for friends come from.

  Don't panic at the leaf drop

  Indoors below about 15 °C the tree may shed every leaf. Do not repot it, do not feed it, and above all do not water it back to life — park it bright and cool, nearly dry, and it refoliates in spring.

Year by year

• year 1

  The slow year

  Year one is a taproot and a stick, and that is the whole assignment. Keep it warm and bright, resist the urge to feed it into a hurry, and let it be small.

• years 2–4

  Coming into its stride

  The flushes strengthen year on year and real harvests begin — whole sprigs without setting the plant back. Toward the end of this stretch, a warm-grown tree may throw its first white clusters.

  The thicket years

  A mature curry leaf is a small ecosystem: full harvest rhythm, flowers and black berries in warmth, and a steady press of root suckers angling to turn one pot into a grove. Annual pruning is the treaty that keeps the peace.
