A domesticated chile from Central and South America, Bell Pepper is the one member of its famously fiery clan bred to carry no heat at all — just thick, sweet walls that ripen from green through yellow to red, growing sweeter at every turn. Every self-pollinated white star flower sets a fruit.
Though grown as an annual, it's secretly a tender perennial. Sown in a warm germination environment in late winter, it bushes out through spring and continually fruits until frost ends the run. A hard cutback plus a warm bright habitat like a sunny windowsill can smuggle it into a second year. To increase fruit yield, pick often.
